Apples have an important place in our diet. We mostly eat fresh and raw apples, but they can also be used as an ingredient for many popular foods, cakes, desserts, stews, salads, etc.

Desserts

1. Apple Conserve

Ingredients

Peeled and chopped apple: one pound
Sugar: three quarters of a pound
Water:half a pint

Directions

First make thick syrup by boiling sugar and water. Then, add apples and let it boil gently until it becomes clear.

2. Apple Fritters

Ingredients

Sweet milk: 1 cup
Egg: 1
Baking powder: 1 teaspoon

Directions

First add egg, baking powder, salt, chopped apples, and flour to the milk. Mix all the ingredient until the batter is stiff enough not to drop easily from the spoon. Then, fry the small or medium portions of batter in deep boiling oil.

3. Apple Biscuits

Ingredients

Milk: 1 cup
Sugar: 1 teaspoon
Butter: 1 tablespoon
Salt: 1 teaspoon
Flour: 2 cup
Grated apple: 1 cup
Soda: ½ teaspoon
Yeast: ½ teaspoon

Directions

Heat the milk. Add sugar and butter to the hot milk and let the mixture to get cool. Dissolve yeast in warm water. Then, add salt and 1 cup of flour to the dissolved yeast. Let rise, then add grated apples and the rest of flour (1cup) mixed with soda. Wait and let rise for one hour. Shape into two flat cakes and let them baked in oven. Serve with sugar and butter.

4. Apple and Rose water

Ingredients

Raw Almonds: 1 cup
Maple syrup: ¼ cup
Water: ¾ cup
Rose water: 5 table spoon

Directions

grind the almonds in a food processor. Then, while the processor is working, add maple syrup, water, dates and rose water to ground almonds to have a fine meal. After that, convey the mixture to a large mixing bowl.

1. Apple-onion soup

Ingredients

First, melt butter in a pan. Peel onions, cut them into small slices and add onions to butter. Cook onions until the caramelized. Stir it not to be burnt and add garlic. After one minute, pour apple cider carefully and gradually into the mixture in the pan. Let the mixture boil. After that, reduce the heat and let it boil gently for about 15 minutes or when it reduces to half. Then, add Worcestershire sauce and beef broth to the other ingredients and let it boil gently. Add apple slices and let simmer gently for about 2 minutes to become tender. After the apples become tender remove it from heat. After pouring soup into bowls, you can serve it with blue cheese toasts or just toast alongside the bowl. For making the blue cheese toasts, mix 2 ounces of grated blue cheese and a tablespoon of melted water and spread the mixture on slices of baguette. Put them in oven for one minute.

Salads

1. Apple salad with pumpkin seeds

Ingredients

Apple juice: ¼ cup
Apple cider vinegar: 1 tablespoon
Honey: ½ teaspoon
Salt: 1 teaspoon
Olive oil: 2 tablespoon
Apples: 3
Jicama: 1 small
Cucumber: 1 medium
Red onion: ¼ cup
Toasted pumpkin seeds: ¼ cup
Chives: 1 tablespoon

Directions

These ingredients are enough for 4 to six people. First, whisk together honey, apple juice, vinegar and salt in a bowl. Then add olive oil and whisk again until they are well combined. This mixture is named vinaigrette. Then in another bowl, combine unpeeled and chopped apples, peeled and small chopped jicama, unpeeled and diced cucumber, minced onion, and pumpkin seeds. Peanut butter: one table spoon
Lemon juice: 5 table spoon

5. Red Delicious apple salad

Ingredients

Red delicious apple
Lemon juice: 3 table spoon
Celery: ½ cup
Grapefruit carpels
Mayonnaise: 4 teaspoon
Red maraschino cherries
Blanched hazelnuts:

Cream cheese: ¼ cup

Directions

Sultanas: 75g
Bulgur wheat: 330g
Vegetable or chicken broth: 550ml

Carrots: 2 medium
Pumpkin seeds: ¼ cups
Hazelnuts: 75-100g
Lemon juice: ½ of a large lemon
Groundnut oil: 2 tablespoon

Directions

In a large bowl, pour the hot vegetable or chicken broth, bulgur wheat and sultanas. Cover the bowl and leave the mixture for about 30 minutes. Directions

1. Apple pie

Crust Ingredients
Flour: 3 cups
Brown sugar: 1 tablespoon
Salt: 1 teaspoon
Butter flavored all-vegetable shortening: ½ cup
Unsalted butter: ½ cup
Cold water: ½ cup
Cooking spray
1 egg yolk + one teaspoon water
Filling ingredients
Apples: 4
Lemon juice: 2 table spoon
Granulated sugar: 2/3 cup
Brown sugar: ½ cup
Flour: ½ cup
Ground cinnamon: 1 teaspoon
Ground nutmeg: 1/8 teaspoon
Ground allspice: 1/8 teaspoon
Egg: 1
Bourbon: 1 ½ tablespoon
Butter: 2 tablespoons
Vanilla sugar: optional (used for sprinkling)

Directions

In a large bowl combine flour, sugar and salt. Cut the shortening and butter into small pieces and add them to the flour mixture using a blender. Gradually add the cold water and mix it with the other material by your finger. Don’t use your hands or palms for mixing because dough gets warm. Add water until the dough is neither sticky nor crumbly. Divide dough into halves. Put one half in plastic wrap and press it to get flat. The second half should be rolled out and placed in pie plate. Brush all parts of dough with egg wash and put it in refrigerator for 10 minutes.

In this state preheat the oven to 425 degrees Fahrenheit and prepare the filling material. Cut the peeled apples into ¼ inch pieces. Mix the lemon juice and apples in a bowl. Ground allspice: 1 teaspoon
Ground cloves: 1 teaspoon
Salt: ½ teaspoon
Chopped walnuts: 175g
Raisins: 220g
Dates: 220g (pitted and chopped)
Glace cherries: 125g (coarsely chopped)
Apple sauce: 500g
Glace cherries: 6(halved)
Pecan halves: 6

Directions

In a bowl, beat the mixture of sugar and margarine until light and soft. Add both eggs and blend again. Separate 65 gram of the flour and mix it with chopped dates and all the cherries. Stir this mixture and put it aside.

Add soda, the rest of flour, cinnamon, salt, allspice, and cloves to the egg mixture. Blend this mixture gently, and then stir with a higher speed for two minutes.
Pour apple sauce and fruit and nut mixture into the dough.Grease the cake tin and pour dough in cake tin. You should preheat the oven to 160 C. bake this cake in oven for 75 to 105 minutes. For testing if the cake is baked or not, you can insert a knife in center to see if it comes clean or with dough. If it comes clean, the cake will be ready.

Main Dishes

Apple and sausage patties

Ingredients

Olive oil: 1 tablespoon
Unpeeled diced apples: 1 ½ cup
Chopped sweet onion: ½ cup
Garlic: ¾ teaspoon, minced
Chopped Fresh basil:1/3 cup
Rubbed sage: 1 teaspoon
Salt: ½ teaspoon
Ground coriander: ½ teaspoon
Ground black pepper: ¼ teaspoon
Ground chicken: 1 ½ pounds

Directions

First, add onion and apple to the heated oil. After about two minutes and when they get soft, add garlic. Then, let the mixture to lose temperature and get cool. After that, add ground chicken, basil, sage, salt, coriander and pepper and mix them with hands. After the combination of ingredients, shape the material into patties, transfer them to a tray and put them in the refrigerator to get ready. Bring the sausages out of refrigerator and put them in heated oil and let them cook for 6 to 8 minutes. Finally drain them on towels before serving.
